Ingredients

3 medium zucchini, spiralized into noodles

1 cup cooked pasta (penne or rotini works wonderfully)

1 cup marinara sauce (homemade or store-bought)

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon garlic powder

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Set your oven temperature to 375°F (190°C) so it’s ready for baking.

Prepare Zucchini Noodles: Spiralize the zucchini to create long, noodle-like strands. Transfer these zucchini noodles into a colander and sprinkle them lightly with salt. This will help to draw out excess moisture. Let them rest for about 15 minutes. Afterward, use paper towels to pat them dry.

Mix the Cheeses: In a large mixing bowl, combine the ricotta cheese with half of the shredded mozzarella, dried oregano, dried basil, garlic powder, and a good amount of salt and pepper. Stir vigorously until all ingredients are well blended and creamy.

Combine Ingredients: In a large baking dish, combine the cooked pasta and the prepared zucchini noodles. Pour the marinara sauce over the mixture, gently folding to ensure everything is evenly coated in sauce.

Layer the Bake: Spoon the creamy cheese mixture over the noodle and sauce blend, spreading it out evenly. Top it off with the remaining mozzarella and then sprinkle the grated Parmesan over everything for that delicious golden finish.

Bake to Perfection: Cover the dish tightly with aluminum foil and place it in the oven. Bake for 25 minutes. After this time, remove the foil and return to the oven to bake for an additional 15 minutes, or until the cheese is beautifully bubbly and golden brown.

Cool and Serve: Once baked, remove the dish from the oven and allow it to cool for about 5-10 minutes before serving. If desired, garnish each serving with fresh basil leaves for a pop of color and flavor.

Prep Time: 20 minutes | Total Time: 55 minutes | Servings: 4-6 servings
