Ingredients

2 medium zucchinis

1 cup panko breadcrumbs (for extra crunch)

1/2 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon fine salt

1/4 teaspoon freshly ground black pepper

2 large eggs

1/4 cup all-purpose flour

Olive oil spray (or a drizzle of olive oil for added flavor)

Fresh parsley, finely chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). To make cleanup easy and prevent sticking, line a baking sheet with parchment paper.

Prepare the Zucchini: Rinse and thoroughly dry the zucchinis. Cut off both ends and slice each zucchini into rounds about 1/4-inch thick. If your zucchinis are on the larger side, consider halving them lengthwise before slicing to ensure even cooking.

Set Up the Breading Station: Organize your breading station with 3 bowls: In the first bowl, place the all-purpose flour. In the second bowl, beat the eggs until smooth and well-combined. In the third bowl, combine the panko breadcrumbs, grated Parmesan cheese, Italian seasoning, garlic powder, onion powder, salt, and black pepper. Mix well to distribute the seasonings evenly.

Bread the Zucchini: Take each zucchini slice and coat it in the flour, shaking off any excess. Next, dip it into the egg mixture, allowing any excess to drip off. Finally, roll the slice in the breadcrumb mixture, pressing lightly to ensure a good coating. Repeat this process until all zucchini slices are breaded.

Arrange on Baking Sheet: Lay the breaded zucchini bites in a single layer on the prepared baking sheet. For added crunch and a lovely golden hue, lightly spray or drizzle with olive oil.

Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes. Flip the zucchini bites halfway through the cooking time to ensure they crisp up evenly, until they are golden and crunchy.

Serve: Once baked, remove the bites from the oven and allow them to cool slightly. Sprinkle with finely chopped fresh parsley for a burst of color and flavor before serving. They are delightful on their own or paired with marinara sauce or a creamy yogurt dip!
