4 medium zucchinis, spiralized into noodles

1 pint cherry tomatoes, halved

1 cup fresh basil leaves, packed

1/4 cup pine nuts (or swap with walnuts for a different flavor)

2 cloves garlic, minced

1/2 cup Parmesan cheese, finely grated (or use nutritional yeast for a vegan alternative)

1/2 cup extra virgin olive oil

Salt and freshly ground black pepper, to taste

Optional: crush red pepper flakes for an added kick

Extra fresh basil leaves and additional Parmesan cheese for garnishing

Instructions
 

Prepare the Pesto:

    - In a food processor, combine the packed fresh basil leaves, pine nuts, minced garlic, and grated Parmesan cheese.

      - Pulse the mixture until the ingredients are coarsely chopped.

        - While the processor is running, gradually drizzle in the extra virgin olive oil to achieve a smooth, creamy consistency.

          - Taste and season with salt and freshly ground black pepper. For a bit of heat, stir in a pinch of crushed red pepper flakes.

            Spiralize the Zucchini:

              - Use a spiralizer or a vegetable peeler to create noodles from the zucchinis.

                - For less moisture, sprinkle a little salt over the zucchini noodles and let them rest for about 10 minutes. This will draw out excess water, which you can then dab off with paper towels.

                  Sauté the Cherry Tomatoes:

                    - In a large skillet, heat a tablespoon of olive oil over medium heat.
