Twist the towel or gather the edges and squeeze out as much moisture as possible. Removing excess moisture is key to achieving perfectly crispy fritters.

    Combine Ingredients: In a large mixing bowl, add the strained grated zucchini, crumbled feta cheese, flour, eggs, chopped green onions, minced garlic, dried oregano, salt, black pepper, red pepper flakes (if using), and chopped parsley.
