1/4 cup packed brown sugar

1/4 teaspoon ground cinnamon

1/4 cup cold butter, cubed

1/4 cup rolled oats

1/4 cup chopped nuts (optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or lightly greasing each cup.

    Prepare the Zucchini: Grate the medium zucchini using either a box grater or a food processor. Once grated, place the zucchini in a clean kitchen towel and twist it to squeeze out any excess moisture. Set the drained zucchini aside while you prepare the muffin batter.

      Make the Muffin Batter:

        - In a large mixing bowl, whisk together the granulated sugar, brown sugar, and vegetable oil until well blended.

          - Add the eggs to the mixture one at a time, whisking thoroughly after each addition. Follow with the vanilla extract.

            - In a separate bowl, combine the all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Whisk well to ensure the dry ingredients are evenly mixed.
