Zucchini Chicken Alfredo

2 medium zucchinis, spiralized or sliced into thin ribbons

2 boneless, skinless chicken breasts, sliced into strips

2 cups heavy cream

1 cup freshly grated Parmesan cheese

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon Italian seasoning blend (oregano, basil, thyme)

Sea salt and freshly cracked black pepper to taste

Fresh parsley, roughly chopped (for garnish)

Prepare the Zucchini: If you haven't done so already, spiralize the zucchinis into noodle-like spirals or slice them into thin ribbons. Once prepared, lay them on a clean paper towel and sprinkle lightly with salt to draw out excess moisture. Set aside.

    Cook the Chicken: In a large skillet, heat the olive oil over medium heat. While the oil is warming, season the chicken strips generously with salt, pepper, and the Italian seasoning. Once the oil is sizzling, add the seasoned chicken to the skillet. Cook for approximately 5-7 minutes, turning occasionally, until the chicken is golden brown and cooked through. Once done, transfer the chicken to a plate and cover to keep warm.

      Make the Alfredo Sauce: In the same skillet, keeping the heat at medium, add the minced garlic and sauté for about 1 minute until it becomes fragrant, being careful not to let it burn.
