2 large apples (such as Honeycrisp or Fuji), peeled, cored, and diced

2 tablespoons unsalted butter

1 tablespoon brown sugar

1 teaspoon ground cinnamon (for roasting apples)

1 ½ cups all-purpose flour

¾ cup granulated sugar

½ cup light brown sugar, packed

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon (for muffin batter)

1 large egg

½ cup whole milk

⅓ cup vegetable oil

1 teaspoon vanilla extract

1 cup chopped walnuts or pecans (optional)

Roast the Apples: Preheat your oven to 350°F (175°C). In a medium skillet over medium heat, melt the unsalted butter. Add the diced apples, brown sugar, and 1 teaspoon of ground cinnamon. Sauté for approximately 5-7 minutes until the apples are tender and caramelized. Remove from heat and let the mixture cool slightly.

    Prepare the Muffin Batter: In a large mixing bowl, combine the all-purpose flour, granulated sugar, packed light brown sugar, baking powder, baking soda, salt, and 1 teaspoon of ground cinnamon. Whisk together until well combined.

      Combine Wet Ingredients: In a separate bowl, crack the egg and beat it lightly. Then add the whole milk, vegetable oil, and vanilla extract. Whisk until the mixture is smooth and fully blended.
