1 pound ground turkey

2 cloves garlic, minced

1 red bell pepper, diced

1 cup corn (fresh, frozen, or canned)

1 cup black beans, rinsed and drained

1 teaspoon chili powder

1 teaspoon ground cumin

½ teaspoon smoked paprika

Salt and pepper, to taste

1 tablespoon fresh lime juice

2 tablespoons fresh cilantro, chopped

For the avocado sauce:

1 ripe avocado

1 cup Greek yogurt or sour cream

Juice of 1 lime

1 garlic clove, minced

Salt, to taste

Water (to thin out the sauce, if necessary)

For assembly:

8 small corn or flour tortillas

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Prepare the Turkey Filling:

    In a large skillet, heat the olive oil over medium heat. Once the oil is hot, add the diced onion and sauté until it becomes translucent, which should take about 3-5 minutes. Then, add the minced garlic and continue to sauté for another minute until the garlic is fragrant.

      Add Vegetables:

        Next, stir in the ground turkey, breaking it apart with a spatula or wooden spoon. Cook the turkey until it is browned and cooked through, about 5-7 minutes. Once the turkey is cooked, introduce the diced red bell pepper, corn, and black beans to the skillet. Mix everything together well.

          Season the Mixture:

            Add the chili powder, ground cumin, smoked paprika, and season with salt and pepper to taste. Drizzle the lime juice over the turkey mixture and sprinkle in the chopped cilantro.
