Ingredients

1 pound ground turkey

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

2 teaspoons fresh ginger, grated

1 teaspoon soy sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1/2 cup mango puree (store-bought or homemade)

1 tablespoon fresh lime juice

1 tablespoon honey

1/2 teaspoon chili flakes (adjust to your spice preference)

Salt and pepper to taste

1 head of butter or romaine lettuce, leaves separated

Fresh cilantro, for garnish

Chopped scallions, for garnish

Crushed peanuts or cashews (optional, for added crunch)

Instructions

Prepare the Mango Glaze: In a small saucepan, combine the mango puree, fresh lime juice, honey, and chili flakes over medium heat. Stir the mixture thoroughly and allow it to simmer for about 5 minutes, or until it slightly thickens. Once done, remove from heat and set aside.

Sauté the Turkey Mixture: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and cook until it turns translucent, which should take around 3-4 minutes.

Add Remaining Vegetables: Next, introduce minced garlic, diced red bell pepper, and grated ginger into the skillet. Sauté this combination for an additional 2-3 minutes until the mixture becomes fragrant.

Cook the Turkey: With the skillet still on medium heat, add the ground turkey. Use a spatula to break it up and combine it with the sautéed vegetables. Season generously with salt and pepper. Cook for approximately 6-8 minutes, or until the turkey is fully browned and cooked through.

Incorporate Sauces: Add soy sauce, hoisin sauce, and rice vinegar to the turkey mixture. Stir it well and let it cook for another 2 minutes, allowing the flavors to meld together. Once combined, take the skillet off the heat.

Assemble the Wraps: Take a lettuce leaf and place a generous spoonful of the turkey mixture in the center. Drizzle the prepared mango glaze over the filling.

Garnish: Top the wraps with fresh cilantro and chopped scallions. If you desire an extra crunch, sprinkle some crushed peanuts or cashews on top.

Serve: Wrap the lettuce around the filling and enjoy these fresh and vibrant bites immediately for the best flavor and texture.
