1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 packet taco seasoning

1/2 cup onion, finely chopped

2 cloves garlic, minced

1 cup shredded mozzarella cheese

1 cup cornmeal or polenta

2 cups water

1/2 cup shredded cheddar cheese

Fresh cilantro, chopped (for garnish)

Sour cream (for serving, optional)

Prep the Base: In a medium saucepan, bring 2 cups of water to a rolling boil. Gradually whisk in the cornmeal or polenta, stirring constantly to prevent lumps from forming. Reduce the heat and let the mixture simmer for about 5 minutes, or until it thickens to a creamy consistency. Remove from heat and let it cool slightly.

    Cook the Turkey: Heat a large skillet over medium heat. Add the finely chopped onion and minced garlic, sautéing until the onions become translucent, about 3-4 minutes. Then, add the ground turkey, breaking it apart with a spatula, and cook until it’s browned and fully cooked through, approximately 5-7 minutes.

      Add the Chili Ingredients: Stir in the drained kidney beans, diced tomatoes (with their juices), and the taco seasoning. Reduce the heat to low and let the mixture simmer for 10-15 minutes, stirring occasionally, to allow the flavors to meld together.

        Form Pizza Bites: Preheat your oven to 400°F (200°C). Lightly grease a mini muffin tin. Spoon approximately 1 tablespoon of the cooled cornmeal mixture into each muffin cup, pressing down gently to form a solid base. Next, add about 1 tablespoon of the turkey chili mixture on top of each base.

          Cheese It Up: Generously sprinkle shredded mozzarella cheese over each pizza bite, followed by a light sprinkle of shredded cheddar cheese to enhance flavor.

            Bake to Perfection: Carefully place the muffin tin in the preheated oven and bake for 12-15 minutes, or until the cheese is bubbly and golden brown on top.
