Ingredients

2 cups cooked chicken breast, shredded

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

4 large flour or whole wheat tortillas

1 cup shredded lettuce

1 medium tomato, diced

½ cup corn (fresh, canned, or frozen)

½ cup black beans, rinsed and drained

½ cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro leaves, for garnish (optional)

For the Avocado Cream:

1 ripe avocado

½ cup Greek yogurt or sour cream

1 tablespoon fresh lime juice

Salt, to taste

Instructions

Prepare the Avocado Cream: In a blender or food processor, combine the ripe avocado, Greek yogurt, lime juice, and a pinch of salt. Blend until the mixture is smooth and creamy. Taste and adjust the seasoning, adding more salt or lime juice if necessary. Set aside.

Cook the Chicken: Heat the olive oil in a large skillet over medium heat. Add the shredded chicken and sprinkle with chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir well to coat the chicken with the spices and cook for 5 to 7 minutes, until the chicken is heated through and evenly coated in the spice blend.

Warm the Tortillas: While the chicken is cooking, warm the tortillas. You can either heat them in a dry skillet over low heat for about 30 seconds on each side or place them in the microwave for a few seconds to make them pliable.

Assemble the Wraps: Lay a tortilla flat on a clean surface. Spoon a generous portion of the spiced chicken into the center. Top with shredded lettuce, diced tomatoes, corn, black beans, and a sprinkle of shredded cheese. Add a dollop of avocado cream on top.

Wrap It Up: Fold the sides of the tortilla in towards the center, then roll it away from you to tightly encase the filling. Repeat this step with the remaining tortillas and filling.

Serve: If desired, slice each wrap diagonally in half. Serve immediately with extra avocado cream on the side for dipping and a sprinkle of fresh cilantro leaves on top for a vibrant garnish.
