1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 (15 oz) can black beans, rinsed and drained

1 cup corn (canned or frozen)

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheese (cheddar or Mexican blend)

Fresh salsa, sour cream, and avocado slices for toppings

Instructions
 

Heat the Oil: In a large skillet, warm the olive oil over medium heat. Once hot, add the finely chopped onion and sauté for 3-4 minutes until it becomes translucent and fragrant.

    Add Garlic & Bell Pepper: Stir in the minced garlic and diced bell pepper, cooking for another 2-3 minutes until the bell pepper begins to soften and the garlic is aromatic.

      Cook the Turkey: Increase the heat slightly and add the ground turkey to the skillet. Use a spatula to break it apart, cooking until the turkey is browned and fully cooked through, which should take about 5-7 minutes.
