2 large sweet potatoes, peeled and cut into 1-inch cubes

1 cup cooked black beans, drained and rinsed thoroughly

1/2 cup breadcrumbs (substitute with gluten-free if desired)

1/4 cup red onion, finely diced

2 cloves garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp chili powder (optional, for an extra kick)

Salt and pepper, to taste

1/4 cup fresh cilantro, chopped

1/4 cup crumbled feta cheese or a vegan substitute (optional)

8 whole wheat slider buns

Avocado slices for topping

Lettuce and tomato slices for serving

Instructions
 

Cook the Sweet Potatoes: In a large pot, bring water to a rolling boil. Carefully add the cubed sweet potatoes and cook them for approximately 15-20 minutes, or until they can be easily pierced with a fork. Once cooked, drain the sweet potatoes and allow them to cool slightly.

    Mash and Combine Ingredients: Using a fork or a potato masher, mash the cooked sweet potatoes in a large mixing bowl until they are smooth. Next, add the black beans and mash together until combined, taking care to keep some of the beans chunky for texture.

      Season and Form Sliders: Incorporate the breadcrumbs, diced red onion, minced garlic, ground cumin, smoked paprika, optional chili powder, salt, pepper, chopped cilantro, and optional feta cheese into the mashed mixture. Mix thoroughly until evenly combined. If the mixture feels too wet to form patties, gradually add a bit more breadcrumbs until it reaches the desired consistency.

        Shape Sliders: Divide the mixture into equal portions and shape each portion into small patties, approximately the size of your slider buns. The recipe should yield around 8 sliders.
