Sweet Potato Sausage Sheet Pan Dinner

1 lb sweet potatoes, peeled and cubed into 1-inch pieces

1 lb smoked sausage (such as kielbasa or andouille), cut into ½-inch rounds

1 red bell pepper, diced

1 yellow bell pepper, diced

1 medium red onion, chopped

3 cloves garlic, minced

4 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon thyme leaves (fresh or dried)

Salt and freshly ground black pepper, to taste

Fresh parsley, finely chopped (for garnish)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure it’s hot enough for perfect roasting.

    Prepare the Vegetables: In a large mixing bowl, combine the cubed sweet potatoes, sliced sausage, diced red and yellow bell peppers, chopped red onion, and minced garlic. This colorful combination will add both flavor and nutrition to your dish.

      Season the Mixture: Drizzle the 4 tablespoons of olive oil over the vegetable and sausage mixture. Sprinkle in the smoked paprika, dried oregano, thyme leaves, and season generously with salt and freshly ground black pepper. Toss the mixture thoroughly until every piece is well-coated in the seasonings and oil.

        Arrange on Sheet Pan: Transfer the seasoned mixture onto a large baking sheet. Spread it out evenly in a single layer, ensuring there is enough space between the pieces to allow for even roasting and caramelization.

          Roast in the Oven: Place the sheet pan in your preheated oven and roast for about 25-30 minutes. Stir the mixture halfway through the cooking time to ensure everything cooks evenly. You’ll know it’s done when the sweet potatoes are fork-tender and the sausage has a slight crisp on the edges.

            Garnish and Serve: Once cooked, carefully remove the sheet pan from the oven and let it cool for a few minutes. Before serving, generously garnish with freshly chopped parsley to add a pop of color and freshness.
