1 pound baby carrots (or regular carrots, sliced)

3 tablespoons unsalted butter

1/4 cup pure maple syrup

1 tablespoon packed brown sugar

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

Fresh salt and cracked black pepper, to taste

2 tablespoons chopped fresh parsley (for garnish)

Optional: 2 tablespoons crushed walnuts for added crunch

Prep the Carrots: If using regular carrots, peel them and slice into uniform pieces approximately 1/4 inch thick. For baby carrots, simply rinse under cold water and set aside for cooking.

    Boil the Carrots: In a medium-sized pot, bring 4 cups of water to a boil, adding a pinch of salt to enhance the flavor. Carefully place the carrots into the boiling water and cook for about 5-7 minutes, or until they are tender yet maintain a slight crispness. Once done, drain the carrots and set aside.

      Make the Glaze: In a large skillet, melt the unsalted butter over medium heat. Once the butter is fully melted, add in the pure maple syrup, packed brown sugar, ground cinnamon, and ground nutmeg. Cook the mixture for about 2 minutes, stirring occasionally until it bubbles slightly and becomes fragrant.

        Combine: Add the drained carrots to the skillet with the glaze. Gently toss the carrots in the syrup mixture until they are thoroughly coated. Sauté for an additional 5 minutes, stirring occasionally, until the carrots are heated through and the glaze thickens to a syrupy consistency.
