Ingredients

2 cups plain Greek yogurt

1/4 cup honey (plus extra for drizzling)

1 teaspoon vanilla extract

1/2 cup sliced almonds

1/2 cup mixed berries (such as strawberries, blueberries, and raspberries)

1/4 teaspoon sea salt

Optional: 1/4 cup dark chocolate chips for an extra touch of sweetness

Instructions

Prepare the Yogurt Base: In a medium mixing bowl, combine the plain Greek yogurt, 1/4 cup honey, vanilla extract, and sea salt. Using a whisk or spatula, mix the ingredients together until the mixture is smooth and creamy, ensuring the honey is fully incorporated.

Line the Baking Sheet: Take a baking sheet (approximately 9x13 inches) and line it with parchment paper. This will help prevent the yogurt from sticking and make it easier to remove once frozen.

Spread the Yogurt Mixture: Pour the prepared yogurt mixture onto the lined baking sheet. Use a spatula to spread the yogurt evenly, smoothing it into a rectangle about 1/4 inch thick. Ensure it's level for even freezing.

Add Toppings: Evenly sprinkle the sliced almonds and mixed berries over the yogurt layer. If you decide to use dark chocolate chips, add them to the top as well. Gently press the toppings into the yogurt to ensure they stick firmly.

Freeze: Transfer the baking sheet to the freezer. Allow the yogurt bark to freeze for at least 4-6 hours, or until it is completely solid and firm to the touch.

Slice and Serve: Once fully frozen, carefully lift the yogurt bark from the baking sheet by holding onto the edges of the parchment paper. Use a sharp knife or simply break it into pieces with your hands. Drizzle with additional honey if desired for an extra touch of sweetness.

Store Leftovers: Place any leftover yogurt bark pieces in an airtight container and return them to the freezer. Enjoy within 2 weeks for optimal freshness.
