Ingredients

2 cups rolled oats

2 cups almond milk (or your favorite milk)

1/4 cup maple syrup (or honey for a different sweetness)

1 ripe banana, mashed until smooth

1 tablespoon ground cinnamon

1 teaspoon vanilla extract

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup walnuts or pecans, roughly chopped (optional)

1/4 cup raisins or chocolate chips (optional)

Cream cheese frosting (for drizzling, optional)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a 9x9 inch baking dish with cooking spray or a thin layer of coconut oil to prevent sticking.

Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, and salt. Stir the dry ingredients together thoroughly to ensure they are evenly distributed.

Combine the Wet Ingredients: In a separate bowl, whisk together the almond milk, mashed banana, maple syrup, and vanilla extract until the mixture is well blended and smooth.

Combine Both Mixtures: Gradually pour the wet mixture into the bowl with the dry ingredients. Stir until everything is well incorporated. If desired, fold in the chopped walnuts or pecans and mix in the raisins or chocolate chips for added flavor and texture.

Transfer to Baking Dish: Pour the combined oat mixture into the prepared baking dish, spreading it evenly using a spatula.

Bake: Place the baking dish into your preheated oven and bake for 30-35 minutes. The top should be slightly golden and the mixture should feel set to the touch.

Cool and Drizzle: Once baked, remove the dish from the oven and let the baked oats cool for about 10 minutes. For an indulgent treat, drizzle with cream cheese frosting if you like that extra cinnamon roll touch.

Serve and Enjoy: Cut into squares and serve warm. These baked oats make a fantastic breakfast or dessert! Enjoy them plain, or topped with fresh fruit, yogurt, or an extra drizzle of syrup.
