1 large head of green cabbage

1 cup long-grain rice, uncooked

1 pound ground beef (or ground turkey for a lighter option)

1 small onion, finely chopped

2 cloves garlic, minced

1 medium carrot, grated

1 teaspoon paprika

1 teaspoon dried thyme

1 teaspoon ground black pepper

1 teaspoon salt

2 cups beef or vegetable broth

1 can (28 oz) crushed tomatoes

2 tablespoons tomato paste

1 tablespoon olive oil

1 tablespoon brown sugar

Fresh parsley for garnish (optional)

Prepare the Cabbage: Fill a large pot with water, add a generous pinch of salt, and bring it to a boil over high heat. Carefully cut the core from the cabbage head; then, gently place the whole head into the boiling water. Blanch the cabbage for 3-5 minutes until the leaves soften and become pliable. Remove the cabbage and allow it to cool down. Once it’s manageable, carefully peel off 12-15 large leaves, setting them aside.

    Make the Filling: In a skillet over medium heat, warm the olive oil. Add the chopped onion and minced garlic, sautéing them until they turn translucent (about 3-4 minutes). Next, stir in the grated carrot and cook for an additional 2 minutes. In a spacious mixing bowl, combine the ground beef, cooked rice, sautéed onion and garlic mixture, paprika, thyme, black pepper, and salt. Mix until all ingredients are well incorporated.

      Assemble the Cabbage Rolls: Take one cabbage leaf and spoon about 2-3 tablespoons of the filling onto the base of the leaf. Fold the sides over the filling and tightly roll from the base to the top to enclose the filling completely. Position the roll seam-side down. Repeat this process until all filling and leaves are used.

        Prepare the Sauce: In a large pot, combine the crushed tomatoes, tomato paste, brown sugar, and broth. Mix well and let the mixture simmer over medium heat for 5 minutes. Taste the sauce and adjust the seasoning if needed.
