1 tablespoon hoisin sauce

1 tablespoon sugar (brown or white)

1 teaspoon sesame oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1 egg, beaten

1/4 cup breadcrumbs

For the Sauce:

1/2 cup soy sauce

1/4 cup honey

2 tablespoons rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1 tablespoon freshly grated ginger

1 teaspoon cornstarch mixed with 1 tablespoon cold water

For the Noodle Bowl:

8 ounces rice noodles (or your choice of noodles)

2 cups mixed vegetables (e.g., bell peppers, carrots, snap peas)

2 green onions, thinly sliced, for garnish

Sesame seeds, for garnish

Instructions

Prepare the Meatballs:

    - In a large mixing bowl, combine the ground pork (or chicken), grated ginger, minced garlic, chopped green onions, soy sauce, hoisin sauce, sugar, sesame oil, salt, black pepper, beaten egg, and breadcrumbs. Mix until all ingredients are evenly incorporated.

      - Shape the mixture into small meatballs, approximately 1-inch in diameter, and arrange them on a baking sheet lined with parchment paper.

        Bake the Meatballs:

          - Preheat your oven to 400°F (200°C). Bake the meatballs in the preheated oven for 15-20 minutes, or until they are fully cooked and golden brown on the outside.

            Make the Sauce:

              - In a small saucepan over medium heat, combine the soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. Allow the mixture to simmer gently.

                - Gradually stir in the cornstarch mixture to thicken the sauce, cooking for an additional minute until it reaches your desired consistency.

                  Cook the Noodles:

                    - While the meatballs are baking, cook the rice noodles according to the package instructions. Once cooked, drain the noodles and rinse them under cold water to halt the cooking process and prevent sticking.

                      Sauté the Vegetables:

                        - In a large skillet, heat a splash of oil over medium-high heat. Add the mixed vegetables and stir-fry for about 3-4 minutes, or until they are tender-crisp. Season them lightly with salt and pepper.

                          Assemble the Noodle Bowl:

                            - Distribute the cooked noodles evenly among serving bowls. Top each bowl with a generous helping of sautéed vegetables and the baked meatballs. Drizzle the sticky ginger sauce liberally over the entire dish.

                              Garnish and Serve:

                                - For a finishing touch, sprinkle sliced green onions and sesame seeds over the bowls before serving. Enjoy the delightful flavors and aromas of your Sticky Sweet Ginger Meatball Noodle Bowl!
