Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, diced into bite-sized pieces

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 medium carrot, julienned or spiralized

1 bell pepper (any color), thinly sliced

3 green onions, chopped (separate the white and green parts)

3 cloves garlic, minced

1-inch piece fresh ginger, grated

3 tablespoons soy sauce (or tamari for a gluten-free option)

2 tablespoons Sriracha sauce

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

2 tablespoons vegetable oil (for cooking)

1 tablespoon sesame oil

Sesame seeds (for garnishing)

Fresh cilantro (optional, for garnish)

Instructions
 

Marinate the Chicken:

    - In a medium bowl, combine the chicken pieces with 1 tablespoon of soy sauce, 1 tablespoon of Sriracha, and 1 teaspoon of honey. Mix until well-coated and allow to marinate for at least 15 minutes. For optimal flavor, marinating up to an hour is recommended.

      Prepare the Sauce:

        - In a small bowl, whisk together the remaining 2 tablespoons of soy sauce, 1 tablespoon Sriracha, 1 tablespoon honey, and rice vinegar until smooth. Set this sauce aside for later.

          Sauté the Chicken:

            - In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once hot, carefully add the marinated chicken pieces. Stir-fry for approximately 5-7 minutes, or until the chicken is fully cooked through and lightly browned. Once done, remove the chicken from the skillet and set aside.

              Cook the Vegetables:

                      Finish with Sesame Oil:

                        - Remove the skillet from heat and drizzle sesame oil over the stir fry. Toss everything again to infuse that extra layer of flavor.

                          Serve:
