Spinach Artichoke Chicken Pasta Bake

8 ounces penne pasta

2 cups cooked chicken, shredded or diced

1 cup fresh spinach, chopped

1 can (14 ounces) artichoke hearts, drained and finely chopped

1 cup cream cheese, softened to room temperature

1 cup sour cream

1 cup grated Parmesan cheese, divided

1 cup shredded mozzarella cheese, plus extra for topping

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

1/2 teaspoon red pepper flakes (optional, for a spicy kick)

Salt and freshly ground black pepper, to taste

Cooked bacon bits (optional, for added crunch)

Fresh parsley, chopped (for garnish)

Preheat Oven & Cook Pasta: Start by preheating your oven to 350°F (175°C). In a large pot, bring salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Once ready, drain the pasta and set it aside.

    Prepare the Sauce: In a spacious mixing bowl, combine the softened cream cheese, sour cream, and half of the grated Parmesan cheese. Whisk or stir until the mixture is completely smooth. Next, incorporate the minced garlic, onion powder, garlic powder, and red pepper flakes (if desired). Season generously with salt and pepper.

      Mix in the Main Ingredients: Gently fold in the shredded chicken, chopped spinach, and chopped artichoke hearts into the creamy mixture. Then, add the cooked penne pasta and gently combine until every ingredient is well-coated in the sauce.

        Transfer to Baking Dish: Carefully pour the pasta mixture into a lightly greased 9x13 inch baking dish, spreading it out evenly. Top the mixture with the remaining mozzarella cheese and the rest of the grated Parmesan for a cheesy finish.
