Spicy Tuna Rice Paper Rolls with Avocado

Ingredients
  

1 cup sushi rice (or jasmine rice)

1 ¼ cups water

1 tablespoon rice vinegar

1 teaspoon sugar

½ teaspoon salt

1 can (5 oz) tuna in water, drained and flaked

2 tablespoons mayonnaise (preferably Japanese Kewpie)

1 teaspoon sriracha (adjust to taste)

1 tablespoon soy sauce

1 ripe avocado, sliced thinly

1 medium cucumber, julienned

1 small carrot, julienned

8-10 rice paper wrappers

Fresh cilantro leaves (optional, for garnish)

Sesame seeds (optional, for garnish)

Instructions
 

Prepare the Sushi Rice:

    - Start by rinsing the sushi rice under cold running water in a fine mesh sieve until the water is clear. This removes excess starch and prevents the rice from becoming too sticky.

      - In a medium saucepan over medium-high heat, combine the rinsed rice and the 1 ¼ cups of water. Bring to a rolling boil, then reduce the heat to low. Cover the pot and simmer for 15 minutes, or until the rice is tender and all the water is absorbed.

        - In a small bowl, whisk together the rice vinegar, sugar, and salt until fully dissolved. Once the rice is cooked, transfer it to a large mixing bowl and gently fold the vinegar mixture into the rice with a spatula. Allow the rice to cool to room temperature.

          Make the Spicy Tuna Filling:

            - In a mixing bowl, combine the flaked tuna, mayonnaise, sriracha, and soy sauce. Mix until well combined, and taste to adjust the amount of sriracha according to your desired spice level.

              Prepare Fresh Ingredients:

                - Slice the avocado into thin, even pieces. Julienne the cucumber and the carrot into thin strips for easy assembling in the rolls.

                  Soak the Rice Paper Wrappers:

                    - Fill a shallow dish or a large plate with warm water. Briefly dip each rice paper wrapper into the water for about 10-15 seconds, or until it becomes soft and pliable. Carefully lay the wrapper flat on a clean, dry surface.

                      Assemble the Rice Paper Rolls:

                        - On the lower third of the soaked rice paper wrapper, place a small handful of sushi rice. Top it with a few spoonfuls of the spicy tuna mixture.

                          - Layer a slice of avocado, a couple of sticks of cucumber, and carrot strips on top of the tuna filling. If desired, add some fresh cilantro leaves for an herbal touch.

                            - Fold the sides of the rice paper over the filling towards the center, then start rolling tightly from the bottom up to encapsulate all the ingredients securely.

                              Serve:

                                - Arrange the assembled rolls on a serving platter. For an extra touch, sprinkle sesame seeds over the top and garnish with remaining cilantro leaves if using.

                                  - Serve the rolls immediately alongside extra sriracha or soy sauce for dipping to enhance the flavors.
