Spicy Black Bean and Cheddar Sweet Potato Bake

4 medium-sized sweet potatoes, peeled and diced into 1-inch cubes

1 can (15 oz) black beans, rinsed and drained thoroughly

1 cup frozen corn kernels (or fresh if available)

1 cup shredded sharp cheddar cheese, plus extra for a generous topping

1 small red onion, diced finely

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust according to your spice preference)

Salt and pepper, to taste

Fresh cilantro, chopped, for garnish

1 lime, cut into wedges, for serving

Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting.

    Prepare Sweet Potatoes: In a large mixing bowl, add the diced sweet potatoes. Drizzle with olive oil and season with ground cumin, smoked paprika, cayenne pepper, salt, and pepper. Toss well until the sweet potatoes are evenly coated with the spices.

      Roast Sweet Potatoes: Spread the seasoned sweet potatoes in a single layer on a non-stick baking sheet. Roast in the preheated oven for 25-30 minutes, or until they are fork-tender and slightly caramelized. Remember to toss them halfway through cooking to ensure even roasting.

        Sauté Aromatics: While the sweet potatoes roast, heat a skillet over medium heat. If necessary, add a drizzle of olive oil, then sauté the diced red onion for about 4-5 minutes, until it becomes soft and translucent. Add the minced garlic, stirring for another minute until fragrant, but be careful not to burn it.
