2 large eggs

1 cup apple cider (either fresh or store-bought)

1 medium apple, peeled and grated (about 1 cup)

For the Spiced Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened to room temperature

2 cups powdered sugar, sifted

1 tsp vanilla extract

½ tsp ground cinnamon

A pinch of ground nutmeg

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a standard muffin pan with cupcake liners to prevent sticking.

    Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, ground nutmeg, and ground allspice. Set this mixture aside for later use.

      Cream Butter and Sugar: In a large mixing bowl, use an electric mixer to cream the softened butter with the granulated sugar. Beat these together until the mixture is light and fluffy, approximately 3-4 minutes.

        Incorporate Eggs and Vanilla: Add the eggs to the butter mixture one at a time, making sure to beat well after each addition. Then, mix in the vanilla extract until well combined.

          Blend in Dry Ingredients and Cider: Gradually add the reserved dry ingredient mixture to the wet ingredients, alternating with the apple cider. Start and finish with the flour mixture, mixing just until combined to avoid overmixing.
