Ingredients

1 lb (450g) boneless, skinless chicken thighs

2 tablespoons olive oil

2 tablespoons chipotle in adobo sauce, finely chopped

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and freshly cracked black pepper, to taste

1/4 cup fresh cilantro, chopped

Juice of 1 lime

8 small corn or flour tortillas

1 cup red cabbage, finely shredded

1 avocado, sliced

1/2 cup crumbled queso fresco

Lime wedges, for serving

Instructions

Marinate the Chicken: In a bowl, whisk together the olive oil, chipotle in adobo sauce, smoked paprika, ground cumin, garlic powder, onion powder, and a generous pinch of salt and pepper. Add the chicken thighs to the bowl, ensuring they are well-coated in the marinade. Cover and let them marinate in the refrigerator for at least 30 minutes, or up to 2 hours for an even bolder flavor.

Cook the Chicken: Heat a large skillet over medium-high heat. Once hot, add the marinated chicken thighs, cooking for about 5-7 minutes on each side until they reach an internal temperature of 165°F (74°C) and are cooked through. Once done, remove from the heat and allow the chicken to rest for a few minutes to retain its juices.

Shred the Chicken: After resting, use two forks to shred the chicken into bite-sized pieces, ensuring each piece has that smoky flavor infused from the marinade.

Prepare the Tortillas: In a dry skillet over medium heat, warm each tortilla for approximately 30 seconds on each side, or until they are soft and slightly toasted, making them easier to fold.

Assemble the Tacos: Lay a portion of shredded chicken onto each warmed tortilla. Top generously with shredded red cabbage, slices of creamy avocado, and a sprinkle of crumbled queso fresco. Finish with a drizzle of lime juice and a sprinkle of freshly chopped cilantro for that extra zing.

Serve: Arrange the tacos on a platter and serve with lime wedges on the side, allowing each guest to add a squeeze of fresh lime for an extra burst of flavor.

Prep Time: 30 mins | Total Time: 1 hr | Servings: 4-6 tacos

                - Presentation Tips: Serve the tacos on a colorful plate, and garnish with additional cilantro and lime wedges for an appealing look. Consider serving alongside a small bowl of salsa for added flavor diversity.
