Smoked Paprika Chicken and Spinach Pasta

8 oz (225 g) spaghetti or your choice of pasta

1 lb (450 g) boneless, skinless chicken breast, cut into bite-sized pieces

2 tablespoons smoked paprika

1 tablespoon olive oil

3 cloves garlic, minced

1 small onion, finely chopped

4 cups fresh spinach, roughly chopped

1 cup cherry tomatoes, halved

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves, for garnish

Cook the Pasta: In a large pot, bring salted water to a vigorous boil. Add the spaghetti (or your chosen pasta) and cook according to the package instructions until al dente, usually around 8-10 minutes. Once cooked, drain the pasta, reserving 1/2 cup of the pasta water for later use.

    Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the diced chicken breast. Season generously with smoked paprika, salt, and pepper. Cook for about 6-8 minutes, stirring occasionally, until the chicken is golden brown and completely cooked through. Remove the chicken from the skillet and transfer it to a plate, keeping it warm.

      Sauté Aromatics: In the same skillet, reduce the heat to medium. Add the finely chopped onion and cook, stirring, until it becomes translucent, approximately 3-4 minutes. Then, add the minced garlic and continue to sauté for an additional minute until fragrant.

        Add Spinach and Tomatoes: Stir in the fresh spinach and halved cherry tomatoes. Sauté for about 2-3 minutes, or until the spinach wilts and the tomatoes begin to soften, releasing their juices.
