1 lb medium shrimp, peeled and deveined

2 tablespoons olive oil

1 tablespoon fresh lime juice

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and freshly ground pepper to taste

1 large bell pepper (any color), sliced into strips

1 medium onion, sliced into rings

2 cloves garlic, minced

1/4 cup fresh cilantro, chopped (for garnish)

8 small flour tortillas

Optional toppings: sour cream, sliced avocado, fresh salsa, and shredded cheese

Instructions
 

Marinate the Shrimp: In a medium bowl, combine the shrimp with olive oil, lime juice, chili powder, cumin, smoked paprika, salt, and pepper. Toss the shrimp until they are well coated in the marinade. Cover the bowl and let it marinate in the refrigerator for 15 minutes to enhance the flavors.

    Prep the Pan: Heat a large cast-iron skillet or a non-stick frying pan over medium-high heat. Once the pan is hot, add the sliced onion and bell pepper. Sauté for approximately 5-7 minutes, stirring occasionally, until the vegetables are tender and have developed a slight char. Remove the vegetables from the skillet and set them aside.

      Cook the Shrimp: In the same skillet, add the minced garlic and sauté for about 30 seconds until it becomes fragrant. Next, add the marinated shrimp to the skillet. Cook the shrimp for 3-4 minutes, turning them halfway through cooking, until they are pink and opaque.

        Combine and Heat: Return the cooked onion and bell pepper to the skillet with the shrimp. Gently toss all ingredients together for an additional 1-2 minutes, allowing them to heat through and meld the flavors.

          Warm the Tortillas: While the shrimp and vegetables are combining, warm the flour tortillas. You can do this either in a separate skillet over low heat for about 1 minute on each side or in the microwave for about 20-30 seconds until pliable.
