Skillet Sausage and Sweet Potato Hash

1 lb (450g) Italian sausage (choose spicy or mild based on your preference)

2 medium sweet potatoes, peeled and cut into 1-inch cubes

1 large red bell pepper, diced

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp ground cumin

1/4 tsp cayenne pepper (optional, adjust to taste for heat)

Salt and freshly ground black pepper to taste

2 tbsp extra virgin olive oil

3 green onions, sliced (for garnish)

4 large eggs (optional, for topping)

Instructions
 

Cook the Sausage: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage and use a wooden spoon to break it into smaller pieces. Cook until the sausage is browned and no longer pink, about 5-7 minutes. Once cooked, remove the sausage from the skillet and set it aside, keeping the flavorful drippings in the pan.

    Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the diced sweet potatoes and sauté for approximately 10 minutes, stirring occasionally. You want them to soften and develop a light golden color on the edges.

      Add Aromatics: To the skillet, stir in the chopped onion, diced red bell pepper, and minced garlic. Season the mixture with smoked paprika, ground cumin, cayenne pepper (if using), salt, and freshly ground black pepper. Cook for an additional 5-7 minutes until the vegetables are tender and the sweet potatoes are cooked through.

        Combine: Return the cooked sausage to the skillet and gently fold everything together. Continue to cook for another 2-3 minutes to ensure all the ingredients are heated through. Taste and adjust the seasoning if needed.
