2 boneless, skinless chicken breasts

1 cup whole wheat breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

1 large egg, beaten

1 cup marinara sauce (either store-bought or homemade)

1 cup shredded mozzarella cheese

2 medium zucchinis, spiralized into noodles

2 tablespoons olive oil, divided

Fresh basil leaves for garnish (optional)

Instructions
 

Prepare the Chicken:

    - Begin by preheating your skillet over medium heat. Place each chicken breast between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, pound the chicken to an even thickness of about 1/2 inch. This ensures they cook evenly.

      Bread the Chicken:

        - In a shallow dish, combine the whole wheat breadcrumbs, grated Parmesan cheese, Italian seasoning, garlic powder, and a pinch of salt and pepper. Mix well.

          - Dip each flattened chicken breast into the beaten egg, allowing any excess to drip off before placing them in the breadcrumb mixture. Make sure to coat both sides thoroughly for a crispy exterior.

            Cook the Chicken:

              - Once the skillet is heated, add 1 tablespoon of olive oil and swirl to coat. Carefully add the breaded chicken breasts to the skillet. Cook for approximately 5-7 minutes per side, until they are golden brown and cooked through (the internal temperature should read 165°F/74°C).

                              - Add the spiralized zucchini noodles and sauté for 2-3 minutes, stirring gently, until they are just tender but still retain some bite (al dente). Season lightly with salt and pepper to taste.

                                Serve:

                                  - On each plate, create a nest of zucchini noodles, topped with the melty, cheesy chicken and marinara sauce from the skillet.
