Ingredients

1 lb (450g) shrimp, peeled and deveined

2 tablespoons vegetable oil (canola or peanut oil)

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

1 green bell pepper, thinly sliced

3 cloves garlic, minced

1 inch piece of fresh ginger, grated

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon honey or agave syrup

1 teaspoon sesame oil

1/2 teaspoon red pepper flakes (adjust according to your spice preference)

Salt and pepper, to taste

2 green onions, sliced (for garnish)

Cooked rice or noodles, for serving

Instructions

Prepare the Sauce: In a small mixing bowl, thoroughly whisk together the soy sauce, oyster sauce (if using), honey or agave syrup, sesame oil, and red pepper flakes. Set this mixture aside; it will serve as the flavorful sauce for your stir-fry.

Sauté the Vegetables: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once hot, add the sliced red, yellow, and green bell peppers. Stir-fry these for about 3-4 minutes, or until they start to soften but still maintain a bit of crunch. Once done, remove the bell peppers from the skillet and set them aside on a plate.

Cook the Shrimp: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, stir-frying for about 30 seconds or until fragrant. Next, add the peeled and deveined shrimp to the skillet. Cook the shrimp for approximately 2-3 minutes, or until they turn pink and opaque—this indicates they are fully cooked.

Combine Ingredients: Return the sautéed bell peppers back into the skillet with the shrimp. Pour the prepared sauce over the mixture. Toss everything together to ensure the shrimp and vegetables are well coated in the sauce, cooking for an additional 1-2 minutes until everything is heated through.

Season and Serve: Taste your stir-fry and adjust the seasoning with salt and pepper as required. Serve the zesty shrimp stir-fry immediately over a bed of cooked rice or noodles, and garnish with fresh slices of green onions for an added pop of color.
