Ingredients

1 pound medium shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon garlic, minced

1 teaspoon ginger, minced

1 tablespoon soy sauce

1 tablespoon fresh lime juice

Salt and pepper to taste

1 head of butter lettuce or Romaine, leaves carefully separated

1 cup fresh strawberries, hulled and sliced

2 tablespoons honey

1 tablespoon rice vinegar

1 tablespoon sesame seeds

¼ cup chopped fresh cilantro (optional)

Lime wedges, for serving

Instructions

Prepare the Strawberry Glaze:

    - In a small saucepan, combine the sliced strawberries, honey, and rice vinegar over medium heat.

      - Cook for approximately 5-7 minutes, stirring occasionally. This will allow the strawberries to break down and the mixture to thicken slightly.

        - Once thickened, remove from heat and let it cool for a minute. For a smoother glaze, you can blend the mixture until desired consistency is reached. Set the glaze aside.

          Cook the Shrimp:

            - Heat olive oil in a large skillet over medium-high heat.

              - Add minced garlic and ginger, stirring for about 30 seconds until fragrant (be careful not to let them burn).

                - Introduce the shrimp to the skillet, cooking for 2-3 minutes, or until they turn pink and opaque, indicating they’re cooked through.

                  - Drizzle in the soy sauce and lime juice, then season with salt and pepper to taste. Toss the shrimp in the pan to coat them evenly in the sauce and cook for an additional minute. Remove from heat.

                    Assemble the Lettuce Wraps:

                      - Take a leaf of lettuce and place a few shrimp in the center of it.

                        - Spoon a drizzle of the prepared strawberry glaze over the shrimp and sprinkle sesame seeds on top for added crunch.

                          - If desired, add a pinch of chopped cilantro for an herbal note.

                            Serve:

                              - Arrange the assembled lettuce wraps on a serving platter, pairing with fresh lime wedges for an extra zesty punch.

                                - Serve immediately and relish the vibrant blend of flavors!
