4 large bell peppers (choose any vibrant color)

1 cup cooked quinoa (alternative: rice for different texture)

1 cup black beans, rinsed and drained

1 cup corn (can be fresh, canned, or frozen and thawed)

1 cup diced tomatoes (either canned or fresh)

1 cup shredded cheese (cheddar, mozzarella, or your preferred blend)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder (optional, for added heat)

Salt and black pepper, to taste

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Peppers: Carefully slice off the tops of the bell peppers and remove the seeds and inner membranes. Brush the outer surfaces lightly with olive oil and arrange them upright in a baking dish.

      Cook the Filling:

        - In a large skillet, heat the remaining 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and minced garlic, sautéing for about 3-4 minutes until they become soft and translucent.

          - Incorporate the cooked quinoa, black beans, corn, and diced tomatoes into the skillet. Season the mixture with cumin, smoked paprika, chili powder (if you’re using it), as well as salt and black pepper. Continue cooking for an additional 5 minutes, allowing everything to heat through.

            Mix in Cheese: Off the heat, stir in 3/4 cup of the shredded cheese, blending it well with the filling mixture until evenly distributed.
