Savory Turkey and Spinach Stuffed Peppers

4 large bell peppers (any color)

1 pound ground turkey

2 cups fresh spinach, chopped

1 cup cooked quinoa (or rice)

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon olive oil (plus more for brushing)

1 teaspoon Italian seasoning

½ teaspoon smoked paprika

Salt and black pepper to taste

1 cup diced tomatoes (canned or fresh)

1 cup shredded mozzarella cheese

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it's ready for baking.

    Prepare the Peppers: Cut the tops off the bell peppers and carefully remove the seeds and membranes inside. Lightly brush the outer surfaces of the peppers with olive oil for flavor and to help them roast nicely. Place the peppers upright in a baking dish.

      Sauté the Vegetables: Heat a tablespoon of olive oil in a large skillet over medium heat. Once the oil is shimmering, add the finely chopped onion and minced garlic. Sauté these aromatics for about 3-4 minutes until the onion becomes translucent and fragrant.

        Cook the Turkey: Add the ground turkey to the skillet. Use a spatula to break it apart as it cooks. Continue cooking for about 5-7 minutes until the turkey is browned and cooked through, with no pink remaining.

          Add the Spinach and Seasonings: Stir in the chopped spinach along with the Italian seasoning, smoked paprika, salt, and black pepper. Cook for an additional 2-3 minutes, allowing the spinach to wilt and combine with the turkey mixture.

            Mix in Quinoa and Tomatoes: Remove the skillet from the heat and fold in the cooked quinoa and diced tomatoes. Stir thoroughly until everything is well incorporated.

              Stuff the Peppers: Using a spoon, fill each bell pepper with the turkey and spinach mixture, pressing down gently to pack the filling evenly.

                Top with Cheese: Sprinkle a generous amount of shredded mozzarella cheese over the top of each stuffed pepper, ensuring they are well-covered for a delicious cheesy finish.

                  Bake the Peppers: Cover the baking dish with aluminum foil to prevent drying out during the initial bake. Place in the preheated oven for 25 minutes. After this time, remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                    Serve: Once baked, carefully remove the peppers from the oven and let them cool for a few minutes. If desired, garnish with fresh basil leaves for a pop of color and flavor, and serve warm.
