Ingredients

3-4 lbs beef roast (preferably chuck or ribeye)

2 tablespoons olive oil (plus more for searing)

Salt and pepper, to taste

2 teaspoons garlic powder

2 teaspoons onion powder

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 cups low-sodium beef broth

1 cup red wine (Cabernet Sauvignon or Merlot works well)

1 large onion, thinly sliced

4 cloves garlic, minced

2 cups carrots, chopped into large pieces

2 cups potatoes, diced into uniform cubes

1 tablespoon Worcestershire sauce

1 tablespoon cornstarch (optional, for thickening)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 325°F (160°C) to ensure it’s ready for roasting.

Season the Roast: Pat the beef roast dry with paper towels. Rub it generously with olive oil, salt, pepper, garlic powder, onion powder, thyme, and rosemary, making sure every surface is coated evenly.

Sear the Meat: In a large oven-safe skillet or Dutch oven, heat an additional tablespoon of olive oil over medium-high heat. Once hot, carefully place the roast in the skillet, searing it on all sides until it develops a beautiful, rich brown crust, about 4-5 minutes per side.

Add Aromatics: Remove the seared roast from the skillet and set it aside on a plate. In the same skillet, add the sliced onions and minced garlic. Sauté for about 3-4 minutes, or until the onions become translucent and fragrant.

Create the Gravy Base: Pour the red wine into the skillet, using a wooden spoon to scrape up any delicious brown bits stuck to the bottom. This will add incredible flavor. Once the wine has reduced slightly, add the low-sodium beef broth and Worcestershire sauce, bringing the mixture to a gentle simmer.

Add Vegetables: Return the seared roast to the skillet and nestle it amid the chopped carrots and diced potatoes, allowing the vegetables to absorb the savory flavors while the beef cooks.

Roasting: Cover the skillet with a lid or tightly with aluminum foil and place it in the preheated oven. Roast for 3 to 4 hours, or until the meat is incredibly tender and can be easily pulled apart with a fork.

Make the Gravy: Once the roast is finished cooking, carefully remove it from the oven and transfer it to a cutting board. Tent it loosely with foil to keep it warm as you prepare the gravy. If you prefer a thicker gravy, mix cornstarch with a tablespoon of water until smooth, then pour it into the pan drippings over medium heat. Stir constantly until the gravy reaches your desired thickness.

Serve: Slice the roast against the grain into thick, juicy pieces and drizzle with the rich gravy. Garnish with fresh chopped parsley for a pop of color and flavor.

Enjoy!: Serve your heartwarming roast beef alongside your favorite side dishes, and relish in the delightful meal shared with family and friends.
