Savory Italian Sausage Minestrone

2 tablespoons olive oil

1 pound Italian sausage (your choice of mild or spicy), casings removed

1 medium onion, finely diced

3 cloves garlic, minced

2 medium carrots, diced into small pieces

2 celery stalks, diced

1 zucchini, diced

1 cup green beans, trimmed and cut into 1-inch segments

1 can (14 oz) diced tomatoes, undrained

6 cups vegetable broth (or chicken broth for added flavor)

1 can (15 oz) cannellini beans, rinsed and drained

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional for a spicy kick)

Salt and black pepper, to taste

1 cup ditalini pasta (or any small pasta of your choice)

2 cups fresh spinach or kale, roughly chopped

Grated Parmesan cheese, for serving

Fresh basil leaves, for garnish

Instructions
 

Cook the Sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Italian sausage, using a wooden spoon to break it up into smaller pieces. Sauté until the sausage is browned and fully cooked, approximately 5-7 minutes. If there is excess fat, drain it from the pot.

    Sauté Aromatics: Add the diced onion, minced garlic, diced carrots, and diced celery to the pot. Sauté these vegetables for about 5 minutes, stirring occasionally, until they start to soften.

      Add More Vegetables: Stir in the diced zucchini and cut green beans. Continue to cook for an additional 3-4 minutes, allowing the vegetables to become slightly tender.

        Combine Ingredients: Pour in the diced tomatoes (including their juice), vegetable broth, and rinsed cannellini beans. Season with oregano, basil, red pepper flakes, salt, and black pepper. Stir well, and bring the mixture to a gentle simmer.

          Cook the Pasta: Once the soup reaches a simmer, add the ditalini pasta. Cook for an additional 8-10 minutes, or until the pasta is al dente, stirring occasionally to prevent sticking.

            Finish with Greens: In the last couple of minutes of cooking, stir in the fresh spinach or kale, stirring until wilted and fully incorporated.

              Adjust Seasoning: Taste the minestrone and adjust the seasoning, adding more salt and black pepper if needed to enhance the flavors.
