Ingredients

2 cups fresh spinach, roughly chopped

1 cup sour cream

1 cup cream cheese, softened to room temperature

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup mayonnaise

2 cloves garlic, finely minced

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/2 teaspoon red pepper flakes (optional for a spicy kick)

Salt and freshly cracked black pepper to taste

1/2 teaspoon freshly squeezed lemon juice

1/4 cup fresh parsley, chopped (for garnish)

1 baguette or assorted crackers (for serving)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to ensure it's ready for baking the dip.

Prepare the Spinach: In a large skillet heated over medium flame, add the chopped spinach. Sauté for about 2-3 minutes or until the spinach has wilted down. Once cooked, remove it from the heat, let it cool slightly, then squeeze out any excess moisture and give it a fine chop.

Mix the Base: In a large mixing bowl, combine the softened cream cheese and mayonnaise. Use a hand mixer or whisk to beat the mixture until it is creamy and smooth without lumps.

Add Flavorings: To the creamy base, mix in the sour cream, shredded mozzarella cheese, grated Parmesan cheese, minced garlic, onion powder, garlic powder, red pepper flakes (if using), and a pinch of salt and pepper. Stir well until all ingredients are seamlessly blended.

Incorporate Spinach: Gently fold the finely chopped spinach into the creamy mixture, ensuring the spinach is evenly distributed throughout the dip.

Transfer to Baking Dish: Spoon the spinach dip into a greased baking dish (an 8x8 inch dish works perfectly). Use a spatula to smooth the top for an even finish.

Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the dip is bubbly and the top has turned a light golden brown.

Garnish and Serve: After baking, remove the dish from the oven and let it cool for a few minutes. Add a sprinkle of freshly chopped parsley on top for a vibrant finish. Serve warm with sliced baguette or an assortment of crackers for delightful dipping.
