1 can (15 oz) chickpeas, rinsed and drained

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon ground cumin

Salt and freshly ground pepper to taste

1 head of butter or romaine lettuce, leaves carefully separated

1 medium ripe avocado, diced into small cubes

1 small cucumber, finely diced

1 cup cherry tomatoes, halved

¼ red onion, finely chopped

Fresh herbs for garnish (parsley or cilantro)

Juice of 1 lime

Optional: Crumbled feta cheese for topping

Preheat the Oven: Start by preheating your oven to 400°F (200°C). This will prepare it for roasting the chickpeas.

    Prepare the Chickpeas: In a baking dish, combine the drained chickpeas with olive oil, smoked paprika, garlic powder, ground cumin, a pinch of salt, and freshly ground pepper. Toss everything together until the chickpeas are evenly coated in the spice mixture.
