Ingredients

1 medium butternut squash, peeled and diced into 1-inch cubes

3 tablespoons olive oil, divided

Salt and pepper, to taste

8 oz pasta (farfalle or penne recommended)

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried sage

1 cup vegetable broth

4 oz goat cheese, crumbled

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

1/4 cup walnuts, toasted and roughly chopped

Fresh parsley, finely chopped, for garnish

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C) to prepare for roasting the squash.

Roast the Butternut Squash: In a large mixing bowl, toss the diced butternut squash with 2 tablespoons of olive oil, and season generously with salt and pepper. Spread the seasoned squash evenly on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until the squash is tender and caramelized, making sure to flip the pieces halfway through for even cooking.

Cook the Pasta: While the butternut squash roasts, bring a large pot of salted water to a rolling boil. Add the pasta and cook according to the package instructions until it reaches al dente texture. Reserve 1 cup of pasta cooking water, then drain the rest and set the pasta aside.

Sauté Garlic and Herbs: In a spacious skillet, warm the remaining tablespoon of olive oil over medium heat. Once hot, add the minced garlic, dried thyme, and dried sage. Sauté for about 1-2 minutes until the garlic is fragrant, being careful not to let it brown.

Combine Ingredients: Once the garlic is aromatic, add the roasted butternut squash to the skillet. Pour in the vegetable broth and heavy cream, and stir well to combine. Allow the mixture to simmer for approximately 5 minutes to let the flavors meld together.

Mix in Cheese: Lower the heat to medium-low and add in the crumbled goat cheese and grated Parmesan cheese. Stir until the cheeses melt completely and the sauce becomes creamy. If the sauce appears too thick, gradually add reserved pasta water until you achieve your desired consistency.

Add Pasta: Gently toss the cooked pasta into the sauce, mixing thoroughly to ensure that each piece of pasta is well-coated in the creamy sauce.

Finish and Serve: Transfer the pasta to serving plates or a large serving bowl. Top generously with toasted walnuts and a sprinkle of freshly chopped parsley for garnish. Serve hot and savor the delightful flavors of your Butternut Bliss Pasta!
