1 small zucchini, finely grated

1/4 cup finely chopped onion

2 cloves garlic, minced

1/2 cup breadcrumbs (choose whole wheat or gluten-free based on preference)

1/4 cup grated Parmesan cheese (optional, for extra flavor)

1 egg, lightly beaten

1 teaspoon dried oregano

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and black pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Olive oil (for cooking and drizzling)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper to make for easy cleanup later.

    Prepare the Vegetables: In a medium-sized bowl, combine the finely grated zucchini, grated carrot, chopped bell pepper, chopped onion, and minced garlic. Mix thoroughly to ensure all the veggies are well incorporated.

      Combine Ingredients: In a large mixing bowl, add the ground turkey along with the prepared veggie mixture. Next, incorporate the breadcrumbs, Parmesan cheese (if using), lightly beaten egg, dried oregano, ground cumin, smoked paprika, salt, and black pepper. Use your hands or a spatula to mix until all ingredients are evenly combined but be careful not to over-mix, as this can lead to tougher meatballs.
