1 lb ground beef

1 tablespoon olive oil

1 small onion, diced

2 cloves of garlic, minced

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

8 small corn tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1 cup grated cheese (cheddar, Monterey Jack, or a mixture)

For the Fresh Avocado Salsa:

2 ripe avocados, diced

1 small red onion, finely chopped

1 jalapeño, seeded and finely minced (optional)

Juice of 1 lime

1/4 cup fresh cilantro, chopped

Salt, to taste

Prepare the Beef Filling:

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3 to 4 minutes, or until it becomes soft and translucent. Then, stir in the minced garlic and continue cooking for an additional minute, ensuring it becomes fragrant but does not burn.

      Cook the Beef:

        Add the ground beef to the skillet, using a spatula to break it up into smaller pieces. Cook for about 5 to 7 minutes, or until the beef is browned and fully cooked. Drain off any excess fat from the skillet to keep the filling lighter.

          Season the Beef:
