1 lb (450g) beef sirloin, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 teaspoon cornstarch

2 tablespoons vegetable oil

1 red bell pepper, sliced into thin strips

1 yellow bell pepper, sliced into thin strips

1 cup broccoli florets, washed

1 medium carrot, julienned

3 garlic cloves, minced

1 inch fresh ginger, minced

2 green onions, sliced thinly (for garnish)

Salt and pepper to taste

Cooked rice or noodles (for serving)

Marinate the Beef: In a medium bowl, place the thinly sliced beef. Add the soy sauce, oyster sauce, and cornstarch. Mix everything together until the beef is evenly coated. Allow it to marinate for about 10 minutes while you prepare the vegetables.

    Prep the Veggies: During the marination time, wash and slice the bell peppers into thin strips. Cut the broccoli into florets and peel, then julienne the carrot. Mince the garlic and ginger finely, and slice the green onions for later use.

      Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat until it shimmers and is hot but not smoking.

        Cook the Beef: Carefully add the marinated beef to the skillet in a single layer. Let it sear without stirring for 2-3 minutes until browned on the bottom. Flip the beef pieces to cook the other side for an additional 1-2 minutes, until they are cooked through but still juicy. Remove the beef from the skillet and set aside on a plate.
