Ingredients

1 cup canned pumpkin puree

2 cups granulated sugar

½ cup unsalted butter, cubed

½ cup heavy cream

2 teaspoons vanilla extract

1 teaspoon pumpkin pie spice

½ teaspoon salt

3 cups white chocolate chips

1 cup chopped pecans or walnuts (optional)

⅓ cup toasted pumpkin seeds (for garnish)

Instructions

Prepare the Baking Dish: Line an 8-inch square baking dish with parchment paper, allowing some overhang around the edges for easy removal later. Lightly grease the parchment with non-stick cooking spray to prevent sticking.

Mix Butter and Sugar: In a medium saucepan over medium heat, combine the granulated sugar, cubed unsalted butter, and heavy cream. Stir the mixture continuously until the butter is fully melted and the mixture comes to a rolling boil.

Add Flavorings: Once the mixture is boiling, reduce the heat to low. Carefully stir in the canned pumpkin puree, vanilla extract, pumpkin pie spice, and salt. Mix until all ingredients are thoroughly incorporated and smooth.

Incorporate Chocolate: Gradually add the white chocolate chips to the saucepan. Stir continuously as they melt, ensuring the mixture becomes smooth and creamy without any lumps.

Add Nuts: If you’re using nuts, gently fold the chopped pecans or walnuts into the fudge mixture, spreading them evenly throughout for a delightful crunch.

Pour into Baking Dish: Carefully pour the fudge mixture into the prepared baking dish. Use a spatula to spread it out evenly, ensuring a flat surface for even cooling.

Garnish: Sprinkle the toasted pumpkin seeds evenly over the top of the fudge. Press them down gently into the mixture to help secure them.

Chill: Place the baking dish in the refrigerator and chill for at least 2 hours, or until the fudge is firm to the touch and solidified.

Cut and Serve: After chilling, lift the fudge out of the baking dish using the parchment paper overhang. Place it on a cutting board and cut into squares for serving.

Store: Keep any leftover fudge in an airtight container in the refrigerator, where it will stay fresh for up to 2 weeks.
