1 ½ lbs beef sirloin, cut into bite-sized cubes

1 cup fresh pineapple juice

½ cup soy sauce

¼ cup brown sugar

3 cloves garlic, minced

1-inch piece ginger, grated

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

1 tablespoon sesame oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 onion, sliced

2 tablespoons vegetable oil

1 teaspoon ground black pepper

Salt to taste

Fresh cilantro, for garnish

Cooked jasmine rice, for serving

Instructions
 

Marinate the Beef: In a large mixing bowl, combine the beef sirloin cubes, pineapple juice, soy sauce, brown sugar, minced garlic, grated ginger, and ground black pepper. Mix the ingredients well to ensure that the beef is fully coated. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 1 hour, or, for the best flavor, overnight.

    Prepare the Vegetables: While the beef marinates, take the red and yellow bell peppers and onion and slice them into thin strips. Set the prepared vegetables aside for later.

      Sauté the Vegetables: In a large skillet or wok, heat both the vegetable oil and sesame oil over medium-high heat. Once hot, add the sliced onion and sauté until it becomes translucent, about 2-3 minutes. Add the bell peppers and continue to cook for an additional 2-3 minutes, until they are just tender. Remove the sautéed vegetables from the skillet and set them aside.

        Cook the Beef: In the same skillet, add the marinated beef, reserving the marinade for later. Cook the beef over medium-high heat, stirring often, until browned and cooked through, approximately 5-6 minutes.

          Make the Glaze: Pour the reserved marinade into the skillet with the cooked beef and bring the mixture to a simmer. Gradually stir in the cornstarch mixture until the glaze begins to thicken. Allow it to simmer for 2-3 minutes, until it thoroughly coats the beef.

            Combine and Serve: Once the glaze has thickened to your liking, add the sautéed vegetables back into the skillet. Gently stir everything together to combine and ensure the vegetables are coated in the rich glaze. Remove the skillet from heat.
