Ingredients

1 cup all-purpose flour

1/2 cup almond flour

1/2 cup granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup sliced almonds, lightly toasted

1 medium ripe pear, peeled and finely diced

2 large eggs

1 teaspoon vanilla extract

Zest of 1 lemon

Zest of 1 orange (for a unique citrus flavor)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and ensure easy clean-up.

Mix Dry Ingredients: In a spacious mixing bowl, whisk together the all-purpose flour, almond flour, granulated sugar, baking powder, salt, and ground cinnamon until they are thoroughly combined. This will create a uniform base for your biscotti.

Incorporate Wet Ingredients: In a separate bowl, crack the eggs and beat them lightly. Mix in the vanilla extract, lemon zest, and orange zest until the mixture is smooth and well blended. The addition of orange zest provides an extra layer of flavor.

Combine Mixtures: Gradually pour the wet mixture into the dry mixture. Stir gently until just combined to maintain the biscuit's dense texture. Carefully fold in the diced pear and toasted almonds, ensuring that the fruit and nuts are evenly distributed without overworking the dough.

Shape the Dough: Divide the dough into two equal portions. On a lightly floured surface, shape each portion into a log approximately 12 inches long and 2 inches wide. Place each log onto the prepared baking sheet, making sure to leave enough space between them for spreading.

First Bake: Bake the logs in the preheated oven for about 25 to 30 minutes, or until they are lightly golden and firm to the touch. Once done, take them out of the oven and allow them to cool on the baking sheet for 10-15 minutes.

Slice the Biscotti: Once the logs are cool enough to handle, transfer them carefully to a cutting board. Using a serrated knife, slice the logs diagonally into 1/2-inch thick pieces, making each piece uniform for even baking.

Second Bake: Arrange the biscotti slices cut side down back onto the baking sheet. Bake for another 15-20 minutes, turning them halfway through the baking time, until they achieve a golden, crisp texture.

Cool and Serve: Remove the biscotti from the oven and transfer them to a wire rack to cool completely. These delightful treats can be enjoyed on their own or dipped into your favorite coffee or tea for an elevated experience.
