Ingredients

For the crust:

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

¾ cup unsalted butter, melted

For the cheesecake filling:

16 oz cream cheese, softened to room temperature

½ cup granulated sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

2 ripe bananas, mashed until smooth

For the topping:

¼ cup chocolate syrup

¼ cup strawberry syrup

½ cup crushed pineapple, well-drained

Maraschino cherries, for garnish

Chopped walnuts or pecans, optional for added crunch

Instructions

Prepare the crust: In a medium mixing bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix thoroughly until the crumbs are evenly coated and the mixture resembles wet sand. Transfer this mixture to a 9x9 inch baking dish and press it down firmly to form an even layer. Place the dish in the refrigerator to chill while you prepare the cheesecake filling.

Make the cheesecake filling: In a large mixing bowl, use an electric mixer to beat the softened cream cheese and granulated sugar together until the mixture is smooth and creamy, ensuring there are no lumps. Add the vanilla extract and blend until fully combined.

Whip the cream: In a separate bowl, beat the heavy cream using an electric mixer until stiff peaks form. This will ensure that your cheesecake has a light and airy texture. Once whipped, gently fold the whipped cream into the cream cheese mixture using a spatula, being careful not to deflate the cream.

Add the bananas: Gently fold in the mashed bananas into the cheesecake filling, ensuring they are distributed evenly throughout the mixture without losing the airiness from the whipped cream.

Assemble the cheesecake bars: Retrieve the chilled crust from the refrigerator. Pour the creamy banana cheesecake filling over the crust and use a spatula to smooth the surface. Return the dish to the fridge and let it chill for at least 4 hours, or until the cheesecake has fully set and is firm to the touch.

Decorate: Once set, remove the cheesecake from the refrigerator and drizzle both chocolate and strawberry syrups evenly over the top. Sprinkle the drained crushed pineapple and optional chopped nuts across the surface. Finish by placing maraschino cherries strategically for an inviting presentation.

Serve: Cut into squares and serve chilled. These delightful no-bake banana split cheesecake bars are sure to impress!
