2 cups chicken broth

1 lb chicken breast, diced into bite-size pieces

1 cup cremini mushrooms, sliced

1 red bell pepper, diced

1 cup snap peas, trimmed and halved if large

3 green onions, sliced thinly

3 cloves garlic, minced

2 tablespoons low-sodium soy sauce

1 tablespoon oyster sauce (optional)

1 teaspoon sesame oil

2 tablespoons olive oil

Prepare and Cook Quinoa: Rinse the quinoa under cold running water to remove its natural coating, which can be bitter. In a medium saucepan, combine the rinsed quinoa with the chicken broth. Bring the mixture to a rolling boil over medium-high heat. Once done, remove the saucepan from heat and fluff the quinoa with a fork. Set aside to cool slightly.
