Ingredients

1 pound ground turkey

1 cup fresh basil pesto

1 cup shredded mozzarella cheese

1/2 cup diced sun-dried tomatoes (packed in oil)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 package (1 lb) puff pastry sheets (2 sheets)

1 egg, beaten (for egg wash)

Fresh basil leaves (for garnish, optional)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking.

Prepare the Turkey Mixture: In a large skillet, heat over medium heat. Add the ground turkey and cook, breaking it apart with a spatula, until it's browned and fully cooked, which takes about 5-7 minutes. Once cooked, drain any excess fat from the skillet.

Combine Ingredients: Lower the heat to low. Stir in the fresh basil pesto, diced sun-dried tomatoes, shredded mozzarella cheese, garlic powder, onion powder, and salt and pepper to taste. Continue cooking for an additional 2-3 minutes, just until the cheese has melted and the mixture is well combined. Remove from heat and let it cool slightly.

Roll Out Puff Pastry: On a lightly floured surface, take each sheet of puff pastry and roll it out gently to smooth it. Using a sharp knife, cut each sheet into 2-inch squares, yielding approximately 24 squares.

Fill Puff Pastry: Place about a tablespoon of the turkey mixture into the center of each pastry square. Be mindful not to overfill them to ensure proper sealing.

Seal the Puffs: Carefully fold the corners of each pastry square towards the center to enclose the filling completely. Press the edges to seal securely, and if you’d like, use a fork to crimp the edges for a decorative finish.

Egg Wash: Arrange the sealed pastries on the prepared baking sheet. Using a brush, apply a layer of the beaten egg on top of each pastry to promote a beautiful golden color during baking.

Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the puff pastries are golden brown and have puffed up nicely.

Cool and Serve: Once baked, remove the pastries from the oven and allow them to cool for a few minutes. For an elegant touch, garnish with fresh basil leaves if you desire. Serve these warm as a delightful appetizer or snack.
