1/2 teaspoon garlic powder

1/2 teaspoon salt

1 tablespoon freshly chopped cilantro or parsley (optional)

For the Spicy Chickpea Filling:

1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon salt

1/4 teaspoon crushed red pepper flakes (optional, for added heat)

Juice of 1 lime

For the Avocado Cream Sauce:

1 ripe avocado

2 tablespoons Greek yogurt (or a plant-based yogurt alternative)

Juice of 1 lime

Salt and freshly ground pepper to taste

For Assembly:

Fresh sliced cucumbers, radishes, or any preferred veggies

A handful of microgreens or mixed salad greens

Instructions

Prepare the Waffle Batter:

    - In a medium mixing bowl, whisk together the chickpea flour, baking powder, smoked paprika, cayenne pepper, garlic powder, and salt until thoroughly combined.

      - Gradually add in the water and mix until the batter is smooth and lump-free. If using, fold in the chopped cilantro or parsley. Let the batter rest for 10-15 minutes to thicken slightly.

        Make the Spicy Chickpea Filling:

          - In a separate bowl, mash the rinsed chickpeas using a fork or potato masher to achieve a chunky texture.

            - Incorporate the olive oil, ground cumin, chili powder, salt, red pepper flakes (if using), and lime juice. Mix until all ingredients are well blended and set aside.

              Prepare the Avocado Cream Sauce:

                - In a blender or food processor, combine the ripe avocado, Greek yogurt, lime juice, salt, and pepper. Blend until the mixture is smooth and creamy with a vibrant green color.

                  Cook the Waffles:

                    - Preheat your waffle maker according to the manufacturer's guidelines. If required, lightly coat the waffle plates with cooking spray.

                      - Pour a small amount of the chickpea batter onto the preheated waffle maker, ensuring it spreads evenly. Close the lid and cook until the waffles are golden brown and crispy, approximately 3-5 minutes. Repeat this process until all the batter has been used.

                        Assemble the Sliders:

                          - Take a freshly cooked waffle and spread a generous layer of avocado cream on one side.

                            - Add a spoonful of the spicy chickpea filling on top of the cream, followed by your choice of fresh veggies and a sprinkle of microgreens.

                              - Place another waffle on top to complete your mini slider creation.

                                Serve:

                                  - Arrange your Mini Spicy Chickpea Waffle Sliders on a serving platter and garnish with additional microgreens for a pop of color. Enjoy the explosion of flavors in every bite!
