Ingredients

For the Meatballs:

1 pound ground beef (or substitute with ground turkey)

1/4 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, finely minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for heat)

For the Biscuits:

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/4 cup cold unsalted butter, cut into small cubes

3/4 cup cold buttermilk

For Assembly:

1 cup marinara sauce (plus additional for serving)

1 cup shredded mozzarella cheese

Fresh basil leaves for garnish

Instructions

Prepare the Meatballs:

    - In a spacious bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, oregano, basil, salt, black pepper, and optional red pepper flakes.

      - Mix all the ingredients gently with your hands or a spoon until just combined; be careful not to overmix as this can make the meatballs tough.

        - Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

          - Shape the meat mixture into small meatballs, approximately 1 inch in diameter, and arrange them on the prepared baking sheet.

            - Bake in the preheated oven for 15-20 minutes, or until fully cooked through and browned (internal temperature should reach 160°F/70°C).

              Make the Biscuits:

                - In a large mixing bowl, whisk together flour, baking powder, and salt until well combined.

                  - Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs, ensuring some small butter pieces remain for flakiness.

                    - Stir in the cold buttermilk until the dough comes together; do not overmix to maintain a light texture.

                      - Transfer the dough onto a floured surface, knead gently a few times, and roll out to about 1 inch thick.

                        - Use a round biscuit cutter (or a glass) to cut out circles, and then with a smaller cutter (or a shot glass), cut out the center of each circle to create rings. Place the biscuit rings on a baking sheet.

                          Assemble the Subs:

                            - After the meatballs are cooked, take each biscuit ring and place a meatball inside the center.

                              - Generously spoon marinara sauce over each meatball and top with a sprinkle of shredded mozzarella cheese.

                                - Place the assembled biscuit rings back in the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

                                  Serve:

                                    - Carefully remove from the oven and garnish each Mini Meatball Sub Biscuit Ring with fresh basil leaves for an aromatic touch.

                                      - Serve warm alongside extra marinara sauce for dipping.

                                        Prep Time: 20 minutes | Total Time: 45 minutes | Servings: 4-6

Optional Presentation Tips: Serve each assembled biscuit ring on a rustic wooden platter for a cozy feel, and scatter extra basil leaves around for a pop of color. Add small bowls of marinara for dipping on the side to enhance the dining experience!
