1 cup all-purpose flour

1 cup buttermilk

2 large eggs

2 tablespoons granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon vanilla extract

1 tablespoon melted butter

For the Chicken Filling:

1 pound boneless, skinless chicken breasts, cut into cubes

1/2 cup all-purpose flour (for coating)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 large egg, beaten (for dipping)

1 cup panko breadcrumbs

Oil, for frying

For the Honey Mustard Sauce:

1/4 cup mayonnaise

1/4 cup honey

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

Salt and pepper to taste

Instructions
 

Prepare the Waffle Cones:

    - In a mixing bowl, combine the all-purpose flour, buttermilk, eggs, sugar, baking powder, baking soda, salt, vanilla extract, and melted butter. Whisk thoroughly until the batter is smooth and well-blended.

      - Preheat your waffle cone maker according to the manufacturer's guidelines.

        - Pour a small amount of the batter into the preheated waffle cone maker and cook until it is golden brown, typically about 3-5 minutes, depending on your device. Once cooked, carefully remove the cone and shape it into a cone while it's still warm. Repeat until you've made approximately 12-15 mini waffle cones.

          Cook the Chicken:

            - In a separate bowl, mix together the flour, garlic powder, onion powder, paprika, salt, and black pepper. Toss the chicken cubes in this seasoned flour mixture until they're evenly coated.

              - Dip each flour-coated chicken piece into the beaten egg, allowing excess to drip off, then roll it in panko breadcrumbs until fully covered.

                - Heat oil in a large frying pan over medium-high heat. When the oil is hot, fry the chicken pieces in batches to avoid overcrowding, cooking each batch for about 4-5 minutes or until they are golden brown and cooked through. Once done, remove and place on paper towels to drain excess oil.

                  Make the Honey Mustard Sauce:

                    - In a small bowl, combine mayonnaise, honey, Dijon mustard, and apple cider vinegar. Whisk until smooth and well-mixed. Taste and adjust seasoning with salt and pepper as desired.
